For some letters there are a ton of choices and then a few there's really only one thing you can do, BUT the good news is that it is possible to make something out of a handprint that represents each letter of the alphabet. Ooey Gooey Mexican Chicken

This recipe is SO so so yummy and super easy to make too! My husband and I both love it. My daughter also likes it - except for the beans. The best thing about this recipe is it's basically all from cans that you probably have in your pantry - so you just dump it all in the crockpot and you have a fabulous dinner without much effort at all!
Ingredients
3-4 frozen chicken breasts
1 Can cream of chicken soup
1 Can cream of mushroom soup
1 Cup salsa
1 15 oz. can of black beans, drained and rinsed
1 Tbs. chili powder
1 Tbs. cumin
1 4 oz. can diced chiles, undrained
1/4 tsp. cayenne pepper
2 Cups monterey jack cheese
Directions
Add all of the ingredients, except for the cheese to your crockpot. Cook on low for 5-6 hours or on high for 3-4 hours. Shred chicken and return it to the crockpot. Add cheese and stir. Cook long enough for the cheese to get all melted and then serve.
You can eat it like a soup with cheese, sour cream and tortilla chips as your topping, or you could eat it like a burrito. I've never had as a burrito simply because I love it as a soup too much. This recipe makes quite a bit. It would be enough for a family of 6 at least. I've thought that adding a can of corn would be yummy too. Unfortunately my husband doesn't like corn in stuff, so if you try it out, let me know what you think! Enjoy!

Wish I'd Known: Newborn Nights

I totally agree Annie. This simple tip can make your life so much easier! The first instinct for a new mother is when they hear the slightest sound from their beautiful baby, they think he/she needs instant attention. However, often times your baby will wake up and move around a bit and then put themselves back to sleep, but if you don't give them the opportunity to go back to sleep on their own, they will become dependent on you for this.
Of course newborns will cry and need some help at times, but not EVERY time. When you hear your baby whimpering or rustling around, give them a couple of minutes to see if they go back to sleep before jumping in to "save the day" :) Trust me, it will help you get a little more much needed sleep.

Mommy Moment: Look At My Daughter in the Window

Lately we've had some construction going on at our apartment complex. Because of the noise and increased people outside, my daughter has had a difficult time going down for her naps. She's started climbing up onto her dresser, sitting on the window sill, putting herself under the blinds and waving to all who walk by.
The other day, I went in to check on her and remind her that it's time for her nap. She popped out from under the blinds and climbed off of the dresser totally NAKED. Ahh! So pretty much anyone walking by our apartment got greeted by a naked 2 1/2 year old standing at the window. Nice!
